“We’re doing something totally different by approaching Pot + Pan as a traditional brand and retail shop, not a dispensary,” Dunia Khudairi, the company’s CEO and creative director, shares with HighWays Travel. “We integrate cannabis into a lifestyle experience, and there’s a whole community of people who want that.”

Decked out in gingham and stripes, the in-store ambiance is all about creating a whimsical, welcoming environment for curious cannabis consumers and connoisseurs alike. This is not the place to go for sodas with 500 mg of THC or artificially flavored gummies in loud packaging; it’s a spot to pop into for a truly delicious, low-dose edible crafted by a highly accomplished pastry chef, along with a big helping of Americana.
Baking a Brand
Pot + Pan was born in 2016 when Keri-Jon Wilson, a native Mainer with more than a decade of experience in various aspects of the cannabis industry, decided to bring something totally new to the scene. “The neighborhood was evolving, and we didn’t need yet another weed store,” Wilson tells HighWays Travel. Her vision was a kitchen where she could infuse foods with THC concentrate from nearby growers to create locally sourced, accurately dosed treats.
Two years later, Khudairi came on board, bringing a background in marketing, management, and manufacturing that helped take the company from a grassroots startup to a brand with a plan to expand. Next up on the to-do list: Find the perfect pastry chef.
A Culinary-First Approach
Tara Canaday had experimented with cannabis-infused baking for years in her free time while she worked as a professional pastry chef in high-end restaurants and bakeries. “In college, there was nothing out there for me. Edibles were not a good food experience,” she explains. Concocting infused treats remained solely a hobby until she responded to Pot + Pan’s Craigslist ad in 2020.
Canaday’s passion shows in the menu of sweets she’s created to pair naturally with everyday moments, whether that’s celebrating a birthday with hand-painted bonbons in a reusable, childproof tin or enjoying a Maine blueberry crumb bar after dinner. Alongside core items like sour Maine blueberry lemonade gummies, the brand creates limited-edition seasonal drops—think pumpkin spice latte bars or confetti bundt cakes filled with jam and cream. “People love them for celebrations,” says Wilson. “We’re the bottle of wine that you can open and share.”
Low THC, High Nostalgia
Consumers who are new to cannabis edibles often hesitate out of fear of overdoing it, but that’s not an issue with Pot + Pan’s products. The bakery stands out for its focus on low-dose edibles that don’t feel scary or unsafe. On average, the baked goods, chocolates, and gummies contain 2.5 mg of THC per serving, which is just enough to make you feel lifted. “I can feed people delicious edibles that they don’t need to be nervous about,” Canaday says.

This thoughtful approach resonates with the brand’s core audience: parents and professionals who want a balanced, low-dose lifestyle. For them, cannabis doesn’t mean checking out—it means staying present. “Worst that will happen is you won’t feel it,” Wilson explains. “It’s designed to enhance your day, not derail it. And you can always have seconds.”
More Than a Dispensary
When Pot + Pan opened its brick-and-mortar store in June 2024, Portland gained a bright, cheerful space that feels more like a boutique bakery than a dispensary. “Our store is so charming and gorgeous that people don’t even realize it’s a cannabis store at first!” Khudairi shares. Inside, visitors find shelves lined with specialty confections, homewares, birthday candles, and other items that are fun to browse and even more fun to buy.
Customers range from cautious first-timers to seasoned enthusiasts, all drawn in by the store’s inviting atmosphere. “If you try 2.5 milligrams and it’s good, you’ll come back,” Khudairi explains. And as of June 2026, you don’t have to travel to Portland to enjoy the edibles you’re probably craving by now!

A Taste of Maine No Matter Where You Are
For years, Pot + Pan products were available only in Maine dispensaries, but all of that changed with Bundt Bites, a new collection of packaged, hemp-derived THC edibles. The line of infused treats debuted at the prestigious Food & Wine Classic in Aspen, a testament to Pot + Pan’s culinary prowess.
Bundt Bites stays true to the company’s food philosophy, featuring thoughtfully crafted edibles in two different styles.
